Samosa
is a fried or baked dish with filling in it. In India samosa usually consist
potato filling but the filling can be customize according to ones interest like
peas, onions or lentils. Samosa is favorite Indian teatime snack. Indian
samosa is usually vegetarian and served with mint chutney. Being a parent we
always worry kids from where they are eating? Are they eating good quality food?

Ingredients
FOR OUTER
LAYER
- 2 cup maida
- 2 tablsespoon oil
- ½ teaspoon ajwain
- 2 pinch salt
- 1 cup lukewarm water
FOR STUFFING
- 2 cup boiled mashed potato
- 2-3 green chilli chopped
- 1 inch grated ginger
- Pinch of hing (asafoetida)
- ¼ teaspoon red chilli powder
- ½ teaspoon coriander powder
- ½ teaspoon garam masala
- Salt as per taste
- 2 tablespoon oil
- Chopped coriander leaves
METHOD
For crust
- Take a bowl add maida, salt , ajwain and oil.
- Give it a mix.
- Knead the mixture with water.
- Make sure the dough is tight.
Stuffing
- Heat the oil
- Add green chilli, ginger, hing. Sautee it.
- Add red chilli powder, coriander powder and mashed potato.
- Sautee it for 2 minutes.
- Add salt, garam masala, coriander leaves and turn of the flame.
- Let it cool.
Final step
- Make small balls of dough.
- Roll it using rolling pin.
- Cut it into 2 equal part.
- Make pocket from half and stick it using water.
- Fill it with stuffing.
- Seal it the open end.
- Deep fry on low flame till its golden brown.
